Keto Ice Cream

This is a great ice cream treat that will satisfy your cravings for a sweet frozen desert.  You can use any low carb protein powder.  The protein powder will determine the flavor of the ice cream.  Add more or less fat to increase or decrease the calories and fat content

Ingredients

  • 1 cup Unsweetened Hemp Milk You can use any Keto friendly unsweetened milk
  • 2 Tbls Heavy Cream
  • 1 scoop Low Carb Protein Powder We use Quest or Isopure
  • 1/4 tsp Xanthum Gum
  • 1 scoop MCT oil powder or 1/2 Tbls liquid MCT oil
  • 4-8 drops Monkfruit extract
  • 2 cups ice (add more or less to get the consistency you want

Instructions

  • Place all the ingredients except ice in a blender and mix
  • Place ice into blender.  The ice should be a little over the liquid. 
  • Start blender on low speed and quickly turn up to high.  Use your tamper to push the ice into the mixture.  Blend for about 2 seconds until the blender changes sounds and you see it is no longer mixing the ingredients
  • Pour into a bowl, top with your favorite toppings and enjoy

Notes

For lower carbs, use Isopure instead of Quest protein powder. You can also experiment with using a vanilla or unflavored protein powder and then adding in a little extract to change the flavors. Sometimes we even add PB fit powder to increase the fat and give the ice cream a peanut butter flavor.
