Ingredients
- 1 cup almond flour
- 1 Serving Keto Chow any flavor of your choice (NOT THE CORE FLAVORS)
- 2 tablespoons beef gelatin powder
- 1/4 teaspoon baking powder
- 1/4 cup butter softened
- 1/4 cup powdered sweetener
- 1 large egg
- 1 teaspoon vanilla extract
- Orange Preserves You can use any keto friendly jelly, jam, preserves or even fudge
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the almond flour, Keto Chow, beef gelatin powder, and baking powder until well combined.
- In another bowl, using a hand mixer or stand mixer, cream together the softened butter and powdered erythritol (or powdered monk fruit sweetener) until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and beat until fully combined.
- Gradually add the dry ingredients mixture into the wet ingredients and mix until a dough forms.
- Roll the dough into small balls and place them on the prepared baking sheet. Use a spoon or your thumb to gently press down on each ball to create a divot for the filling
- Bake in the preheated oven for 10-12 minutes or until the edges turn golden brown.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
