Keto Bread Pudding

One of Joes favorite deserts is bread pudding. Since starting on keto we've tried to duplicate it using almond flour bread, coconut bread and others but it never worked. Now with the discovery of Maira Emmerich's wonder bread, we can have bread pudding

  • 1/2 recipe Maria Emmerich wonder bread
  • 2 cups heavy whipping cream
  • 1 1/2 cups Maple Hill Zero sugar whole milk
  • 3 Tbls allulose
  • 6 Egg yolks
  • Liquid keto friendly sweetener (like Sucralose)
  • 1/2 tsp cinnamon (optional)
  • 2 Tbls Vanilla Extract


  • Make a batch of PSMF Wonder Bread and cut in half
  • Cut the bread into cubes and place on a baking sheet and bake at 300 degrees for 8-10 minutes to dry it out
  • In a bowl, mix all ingredients except bread and blend
  • Pour mixture over the bread and using a spatula, press the bread into the egg mixture
  • Cover the casserole dish and place in fridge for 4 hours to overnight
  • Bake in oven at 325 degrees for 1 hour or until a knife comes out smooth
