Quick Pound Cake
This recipe was inspired after receiving a pound cake mix in one of our Keto Krates. When we looked at the ingredients, we realized that they were simple selling you simple dry ingredients in a bag for an insane amount of money.

Ingredients
- 2/3 cup coconut flour
- 2/3 cup erythritol We prefer to use the lakanto monk fruit blend
- 3 tsp baking powder
- 4 tbls butter softened
- 4 tbls cream cheese softened
- 4 eggs
- 1 tsp vanilla extract optional
- 1/2 tsp grated lemon rind optional
Instructions
- In a bowl, mix the dry ingredients
- In a second bowl, beat the softened butter and cream cheese until smooth. (do not use melted butter, it should be softened to room temperature)
- Add the eggs to the butter/cream cheese mixture and mix until smooth
- Add in the dry ingredeints
- Pour mixture into a greased or parchment lined loaf pan and bake at 350 degrees for 40 minutes
- Remove from oven and allow to cool for at least 10 minutes
Notes
The lemon rind and vanilla extract are optional. They were not in the cake mixture that this recipe is inspired by but will give a much richer flavor.
Using the Lakanto Monkfruit blend will make this a little sweeter but will also remove some of the cooling effect that comes with erythritol.
