Keto Jambalaya
One of Joe's favorite meals pre-keto was Jambalaya but unfortunately, Jambalaya is typically served over rice or pasta. Thank's to Steve at Serious Keto, Joe can now have one of his favorite dishes again.

Ingredients
- 1 pound Chicken Either ground or cut up into small pieces
- 1 pound Andouille Sauasage Cut into small pieces
- 1 pound Shirmp Pre-cooked and deveined with tails removed
- 2 Tbls Tony Chachere's Creole Seasoning
- 1 tsp Minced garlic
- 2-3 Bell peppers diced
- 1 cup Chicken broth
- 1-2 tsp Tomato Paste
- 1/4 cup Yellow onion diced
- 1/4 cup Butter
- 1/2 tsp Ground Thyme
- Serious Keto's Noodles
Instructions
- Prepare Steve's noodles ahead of time
- In a pan, cook chicken. Once cooked set aside in a bowl
- In same pan, cook or heat up andouille sausage. Once finished, transfer to bowl with chicken
- Add shrimp to the bowl with chicken and sausage
- In your empty pan, add 1/4 cup butter and melt. Add in onion and bell peppers and cook until soft.
- Add tomato paste, thyme, creole seasoning salt and bone broth.
- Reduce heat to a simmer, add protein and simmer for 15 minutes.
- Mix in noodles and serve. (you can also drain liquid and heat up noodles with the liquid then plate noodles and place protein on top)
Notes
This recipe can be served over Cauliflower rice, shiratake noodles or Steve from Serious Keto's chicken noodles. You can even make it as a meal prep with no noodles
