Chocolate mug cake - Coconut flour
Sometimes you just want to have a piece of cake but dont have anything in the fridge. This recipe is super easy and it takes less than 2 minutes to make. It can be made with almond flour or coconunt flour. We prefer to use liquid monk fruit because it is 0 total carbs, has no effect on your blood sugar and tastes incredible but you can substitute stevia or erythritol.

Ingredients
- 1 tbls butter
- 1 tbls cocount flour
- 1 tbls cocoa powder
- 1/4 tsp baking powder
- pinch mineral salt
- 1 egg
- 10-15 drops lakanto monk fruit (liquid) You can use 20-25 drops stevia or 2 tbls erythritol
Instructions
- Melt butter in a mug or ramekin
- add all dry ingredients
- add egg and monk fruit and mix until well combined. If the mixture gets too thick, add a few drops of water. It should be the consistency of brownie batter
- Microwave on high for 70 seconds

Notes
You can substitute 20-25 drops of liquid stevia or 2 tablespoons of Erythritol for the monk fruit. If you opt for Erythritol, be aware that the total carbs will be higher for the cake.
