Chicken Parmesan Casserole

Ingredients

  • 3 Cups Chopped or Shredded Chicken
  • 1 Cup Keto Friendly Tomato Sauce
  • 1 tsp Italian Seasoning
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 Cup Shredded Mozzarella
  • 1/2 Cup Ricotta Cheese
  • 3/4 Cup Shredded or grated Parmesan cheese
  • 1/2 Cup Pork Rind Crumbs

Instructions

  • Preheat oven to 350 degrees
  • In a bowl, Combine all ingredients except Pork Rind crumbs and 1/4 cup of Parmesan Cheese
  • Pour mixture into a prepared 9x9 casserole dish
  • In a separate bowl, combine pork rind crumbs and remaining parmesan cheese
  • Sprinkle pork rind crumb mixture across the top of the casserole
  • If you want it even cheesier, you can add more cheese on top as well as more tomato sauce
  • Bake in oven until top is golden brown and all the cheese melts
