Using a food processor or blender, grind up the High Key Cookies
In a bowl, combine the cookies and cream cheese until it's a uniform mixture
Roll the mixture into 18 separate balls, approximately 16 grams each
Place truffles into the freezer for about 30 minutes
In a microwave safe bowl, combine chocolate chips and butter and melt for 1 1/2 minutes. Every 15-20 seconds, remove from microwave and stir
Take truffles from freezer and coat each one in melted chocolate then dust with cocoa powder
Place back into fridge to allow chocolate to cool.
