Keto Pot Pie

This recipe is the definition of down home comfort food. You can use any kind of vegetables or meat such as chicken, turkey, beef or even lamb.

Ingredients

  • 1/2 coconut flour pie crust or any keto friendly crust
  • 3 tbls butter
  • 2-3 cups chopped turkey or chicken
  • 1/2 cup chopped carrots
  • 1/2 cup chopped green beans
  • 1/2 cup chopped radishes
  • 1/2 cup heavy cream
  • 1/4 cup shredded cheddar cheese
  • 2 cups chicken, turkey or beef stock
  • 1/2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp mineral salt
  • 1/2 tsp konjac flour or xanthan gum

Instructions

  • Make 1/2 recipe of our coconut flour pie crust
  • Preheat oven to 350 degrees
  • in a pan, melt butter and cook vegetables until then begin to soften
  • Chop meat into small pieces
  • Add turkey, heavy cream, stock, cheddar cheese and spices.
  • Combine well and bring to a simmer
  • Sprinkle in konjac flour and allow mixture to thicken
  • Pour into a 9 inch pie pan
  • Cover with crust and slit holes in top for venting
  • If desired, brush with an egg wash
  • Place in oven for 10-15 minutes until crust turns a golden brown
  • Serve immediately

Notes

This goes well with any kind of meat. Nutrition facts will vary based on vegetables and meat that you use. The below nutrition is based on using 1 cup of dark turkey meat and 1 cup of turkey breast.
