Maple Blueberry Sausage Balls

Ingredients

  • 2 pounds Ground Sausage (you can substitute premade breakfast sausage)
  • 4 Tbls Softened Butter You can use lard, bacon grease or tallow
  • 1/3-1/2 cup Sugar Free Maple Syrup
  • 1/2 - 1 cup Fresh or Frozen Blueberries
  • 3/4 cup Pork Rind Crumbs
  • 1 tsp Thyme
  • 2 tsp Rubbed Sage
  • 1 tsp black pepper
  • 2 tsp salt
  • 1 Large Egg

Instructions

  • Start by mashing Blueberries
  • In a bowl, combine ground pork, salt, pepper, thyme, sage until well incorporated
  • Add Egg and Porkrind crumbs and mix well
  • Add Maple Syrup
  • Fold in Mashec Blueberries until well combined
  • Roll into 1 inch balls
  • Bake in an oven at 400 degrees for 22-25 minutes until golden brown or an AirFryer at 380 degrees of 10-12minutes
  • Allow them to rest for 5 minutes before serving

    These are dangerously good. I ate equivalent of 1/4 lb sausage! I used Owen breakfast sausage so I skipped the seasonings, and I substituted 1/4 cup Elevate protein flour for pork rinds. Oh, and I dipped them in sugar free syrup. This is going to be on rotation in my home. Perfect for keto and non-keto sausage lovers.
